Thanksgiving Recipes for Orange County Residents


Most of us have traditional Thanksgiving recipes that our families demand to see on our holiday tables. Obviously the turkey takes center stage and there are always mashed potatoes, stuffing and a multitude of different pies that are staples on Turkey Day but, if you’re thinking about trying something different, we have a few things for you!

Local Orange County, produce this time of year includes root vegetables and squash. Butternut squash is a tasty variety of this vegetable and, although preparing your first butternut squash can be intimidating, don’t let that task put you off of making this tasty dish!

Roasted Butternut Squash Casserole


  • 3 cups butternut squash peeled and cubed
  • 8 ounces pasta (use smaller elbows, mini bow ties or other small pasta)
  • 2 cups milk
  • ¼ cup all-purpose flour
  • ¾ cup sharp cheddar cheese
  • 1/3 cup grated Parmesan cheese
  • 1 cup very thinly sliced red or sweet onion
  • 1 tsp butter or margarine
  • 1 tbsp. butter or margarine
  • ½ teaspoon dried rosemary
  • ¼ teaspoon garlic powder or minced garlic
  • ½ teaspoon paprika
  • ¾ teaspoon salt
  • ½ teaspoon ground black pepper


  1. Preheat oven to 425°
  2. Combine half the salt, all of the rosemary, pepper, paprika.
  3. Cover cookie sheet with aluminum foil and grease or spray with a non-stick spray. Arrange squash on cookie sheet, sprinkle with seasoning mixture and bake for 45 minutes turning once half way through. Increase heat to 475° and bake for ten minutes more.
  4. While squash is roasting, prepare pasta according to package instructions for al dente doneness. Also pan fry onions in the 1 teaspoon of butter and garlic until the onions are translucent.
  5. When pasta, onions and squash are cooked, mix together and set aside. Melt remaining butter in skillet and whisk in flour until it’s completely saturated. Then add the milk slowly while whisking until mixture thickens. Then add cheddar cheese, stirring until it melts.
  6. Combine cheese sauce with the pasta, squash and onions then transfer to a well-greased casserole dish. Sprinkle with parmesan cheese and bake at 350 until brown and bubbling – about 30 minutes for one of the tastiest Thanksgiving recipes ever.

Try adding bacon or turkey bacon to this take on a slightly healthier, more carb-friendly version of mac and cheese. You can also substitute low-fat cheeses or 2% or skim milk to cut the calories down.

Some of the most favorite Thanksgiving recipes are made with carrots and we have a simple one for you to try.

Carrots with Dill Butter


  • 1 pound carrots, peeled and cut to one inch cubes
  • 2 tbsp. butter
  • 1 tbsp. freshly chopped dill
  • 1 tbsp. orange juice
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper


  1. Boil carrots until tender then drain.
  2. Toss with remaining ingredients and serve hot.

Also on the list of local foods are turnips. Try mashing them like potatoes for a slightly tangy twist on your traditional Thanksgiving recipes or roast them with olive oil and your favorite seasonings. Brussels sprouts, carrots and even potatoes can be roasted also. For your traditional sweet potatoes or yams, try adding some freshly ground ginger or even a little bit of chili powder for a different dimension and taste.

As always, when trying a new recipe, give it a test run first to see if it meets your expectations. If you like it but don’t love it, try substituting ingredients for some that you may enjoy more or think about adjusting the measurements until you get it exactly the way you want it!
